  • 80g parsley – chopped finely

  • 40g mint – chopped finely

  • few sprigs basil – chopped finely

  • few sprigs coriander - chopped

  • 3rd cucumber - cubed

  • 3 salad tomatoes – chopped

  • 3 spring onions – chopped

  • ½ bag pre cooked quinoa (cheats version)or bulgur wheat

  • ½ pomegranate – seeds

  • lemon – juiced

  • 2 tbsp extra virgin olive oil


Chop all the ingredients into small pieces and mix with the lemon juice and olive oil – add Himalayan rock salt to taste.
