Squash & Tumeric Soup
Coconut Dahl with Chick Pea Pancakes
The perfect Winter warmer...
The perfect supper for those colder nights drawing in. Squash is the perfect carbohydrate with anti-inflammatory and antioxidant properties as well as blood sugar balancing effects. Teamed with the anti-inflammatory benefits of the turmeric make this soup one of the best when feeling the effects of illness and those dreaded seasonal colds. Team this with a green salad and some sourdough toast for the perfect winter warmer.
Method
- Chop the butternut squash into cm cubes
- Dice the onion and chop the chilli and garlic
- Add the coconut oil/butter to a large saucepan and sauté the chilli, onion and garlic
- Add in the butternut squash to the pan and soften over a medium heat for 10 mins
- Add in the stock and simmer till the squash is soft
- Blitz with a hand blender till smooth consistency
- Garnish with olive il and pumpkinseeds

- Medium butternut squash
- 1 x red onion
- 2 cloves garlic
- ½ x red chilli
- 1 x litre of veg stock
- Coconut oil/butter to sauté
